Date fields off by one day

Whenever I enter dates in a date field, or have them added automatically with the "create" or "modify" options, the date that is recorded is todays date minus one day. If I go back and correct the data in the field, it still gets reported to me as one day prior to the date that was entered. I am using the GMT -7 selection for timezone as we are in Denver, Colorado USA. I don't see anything in docs or FAQ or user forum. Perhaps I misunderstand the purpose of the Timezone parameter, but that does not seem like it would account for the problem.
